Developing the Wheel second will only cost you a little trade, while building a granary fast is very usefull, so that is good (of course I did write Capital AI)
Developing military units next is advisable on densly populated maps, but I normally develop Construction first.
Don't forget mapmaking when applicable.
Remember that building an observatory is a huge investment, which is risky against intelligent, agressive opponents.
Don't forget to build a defensive unit (most AI do forget, and they're very useful.)
Going for Theology is indeed more flexible than going for Mettallurgy (or Philosophy), but less efficient on the long term.
Chivalry might not be worth the additional strength anymore (after you have explosives and tactics), and you're probably too late for the wonder, so skip it.

PS: I almost never build temples. Town guards, luxury, theaters, and colloseum (or going for theocracy)
are more efficient in many cases;
