You can "almost" get any kind of proper details and relevant info straight from the in-game Manual - read it carefully, and you may find that what you're asking above is right there.
-+- But, some key techs MUST be researched before your other cities start to crank out any numbers.
-+- Try fiddling with the percentage sliders in the empire managing tool... it's really surprising how most variables can suddenly show up as you wish 'hem to be!
